Tony,
 
This time we too will have a vegetarian on one of our crews. I have spoken
with the folks at Philmont and they have been very helpful. This year four
of the dinner meals are non-meat (if you ignore the potatoes with cheddar
and bacon :) )
 
As the others have said, check with Philmont, get the full meal plan and
work with them.
 
Step zero should be asking the crew member what will (s)he eat in terms of
milk, fish and eggs.

Has anyone had experience with vegetarian (dairy OK) Scouts on Philmont
treks? I know the rules simply state that special meals or food preferences
must be brought with the group, with the exception of certain Kosher meals.
I've read the entire package.
 
I'm looking for advice from anyone who has dealt with this on a Philmont
Trek in the past. Has it presented any difficulties? Our crews will be full
12-person crews, single vegetarian.
