Up until about 1993 or so, Philmont meals included a pancakes and bacon
breakfast. Not too many tears were shed when that particular meal was
discontinued. Also, the fry pans served double duty for preparing the
various pudding pies (and still do), but some people (my Crews included)
prepare these in pots now instead of using fry pans - it's a lot neater
and therefore more bear safe.
As several people have noted, the principal reason for the frying pans
now is to serve as pot covers - very important for bringing your water
to a boil sometime this century, and for keeping your prepared meals hot
a bit longer.
If you are bringing your own gear (and can check the sizes exactly), you
can fashion shallow pie pans to serve as pot covers. This saves a fair
amount of weight. Don't buy disposables - they won't hold up; get
something with some stiffness to it. You can use "stick on" wall hooks
(the kinds used for hanging pictures) as handles (just stick them on the
middle of the pie pan). For those who are afficionados of the oven bag
cooking method, you can cut 3 or 4 small slots in the sides of the pie
pan for clipping your clothes pins over the bag. But in such cases, you
should get a slightly heavier duty pie pan, as cutting the outer rim 3
or 4 times reduces its structural integrity pretty severely.
