I would suggest at least 3 qt/liter containers per person. I carried two 2
liter platypus containers and one 1 liter water bottle - not always all full
though. The water bottle was also used for side hikes and around camp.
Like Brian suggests, we each carried a 2 liter Platysac to use going into
dry camps or long dry spells. That gave us 18 liters or just under 5
gallons of water without breaking anyone's back with the 2.5 gallon water
containers. When not needed they rolled up and were out of the way.

Another nice thing is the graduations on the side let you *measure* the
amount of water you are putting in the pot to be heated, so you know you are
using "6 cups of water", not "around 6 cups" or "oh, about 3/4 of a quart
water bottle"

If they have had anything but water in them there is still a risk of a
residual aroma, and the duct tape makes them a smellable - although in '99
fuel bottles with duct tape could be left in the fire ring. Don't know how
the new bear protocols will affect this. I would plan on it going up.
Concerning the hydration bladder drinking systems . . . yes it is harder to
monitor the crew's water intake, but because the water is readily available,
we found that the crew was actually drinking more. And with the water
inside your pack in the shade rather than in a pocket in the sun, it stays a
little cooler. You do need to watch where you set your pack down so that
the drinking tube stays clean though.
