Don,
We picked this technique up on our trek last summer. The cooks boiled water and everyone put the food in a bowl or cup, added water, and ate. Everyone clean their own dishes, and we were done.
First off, meal time gets to be more of a chore than an enjoyable experience after a while. No one really wants a gourmet meal. The less hassle for cooking and clean up, the better. Cooking the food this way didn't make it taste any better or worse. It helped control portions. If you opened a food packet, you either had to find someone to share it or eat it all yourself. There weren't any cooked leftovers that someone had to force themselves to eat. Some of the meal packet are a mix of seasoning and substance. We got pretty good at spliting them equitably. Sometimes you had to spoon seasoning from one bowl to another, but the end product came out fine. Everyone was very careful not to spill food or to have powder flying in the wind.
Would I do it again? Yes, and I'll probably do it for all my backpacking from here on out, save the exceptional meal that needs to be done in a pot. Meal times were much less stressful and time consuming.
