This is another case of personal preference, and everyone should look at
the stocking cap option.
For me, I see no need for a stocking cap. I wear a bucket hat when
backpacking. It works somewhat well when sitting around on a cool
night. At bed time, I have a 20 degree mummy bag I use when backpacking,
and its hood does a great job keeping my head warm. Your mileage may very.
