I wasn't familiar with the Aether 85 and had to do a little research. As an internal frame pack at 5400 c.i., it should be large enough. My son and one other buddy each carried Kelty Red Cloud 5000 c.i. internal frame packs and they were just fine. Based on size alone, you should be ok.
I would imagine any outside pockets are figured into the cubic inches, but the Red Cloud had outside pockets similar to an external frame pack. Maybe that had something to do with how well their packs worked out.
The Coyote is a nice enough pack. I believe most would say it's just fine for a weeklong backpacking trip but it's probably pushing it on size. From your description, it might be at that point.
With the above said, you have to consider a crew of 12 and how the gear will get split up. Everyone will divide and carry the crew gear as well as the food. Many times, the crew gear is nearly the same for a crew of 4 as it is for a crew of 12. It will make a difference when everyone carries their share.
The other thing is to make sure your personal clothes and gear is at the barest of minimums. At Philmont, you'll wear one pair of nylon zip-offs and have a one other pair in your compression sack. Probably two quick-dry t-shirts, a long-sleeve quick-dry shirt and a fleece, along with your raingear. You'll want to have 2-3 pairs of hiking socks and a couple pairs of liners. That's it. In a compression sack, everything (except the raingear which goes on top of your pack anyway) should pack to the size of a small Nerf football.
Sorry if it sounds like I'm preaching to the choir. Sounds like you've done everything you can do, but I'm kind of thinking out loud on how to help you get a little room in your pack.

I have an Aether 85 @ 5200 c.i. and my son has a Kelty Coyote @ 4750 c.i.
Boy, let me tell you - the gear barely fits! His 20 degree GoLite sleeping
bag fills up nearly the entire compartment. As far as mine, it is crammed to
the top and we both have wittled the list to bare essentials. There are no
luxury items. I realize that the two of us are carrying gear that would
normally be divided up, but there is no other room. Literally busting at the
seams. I can see no way that 3 days worth of food could also be packed in
there.
We have compression sacks on the bags and on the clothes. Our other weeklong
trips to the AT & Isle Royale didn't seem to be this filling.
Without starting a discussion on internal vs. external frame packs, what
have you guys done?
