All I can say about dining flies is weight weight weight.
You need two for a full crew.

I couldn't let this pass. I can see no reason at all for two dining
flies. Shoot, you rarely even need the one. We set it up every
night on our treks, but never once either cooked under it or ate
under it. I can't imagine why a crew would need two. The rain
almost always stops before dinner and starts after breakfast, and
almost all breakfasts are non-cook. We used it only to stick
gear under to keep it out of the rain on the nights when it rained.

As to weight, I guess that depends on your tolerance. Most
Philmont treks are not at all physically challenging. You are
only at 9 or 10 thousand feet, so it is not as high as a Sierra
Trek, and the distances rarely exceed 10 miles in a day.
Carrying a heavy load of 50 or 60 pounds is not that big
a deal. Paying attention to weight is nice, but your load
isn't so big for the conditions that you have to get all
that sticky about it.
