That one I beieve I've got:

"...come with napoli and cactus"

That took a little searching on Google. There is even a place in that area
of Texas called the Napoli Cafe, and several restaurants list napoli on
their menus. By me, napoli is an Italian angel hair pasta, and that seems
to be what's being referred to in the song - though why it would be served
with Tex/Mex food is beyond my ken. But fried cactus is, of course, a
staple in Tex/Mex food.

By the way, this was only after spending several hours investigating the
names of every kind of edible cactus in the American southwest, and then the
names of prepared cactus. Looks like the simpler explanation was right all
along....

The other things I confirmed off the web were "Deaf Smith County" (what a
wild name!), located west/southwest of Amarillo, and "Glen Rio", a ghost
town near the NM/TX border.
