[philmont] More information on trek 31 - a trek is what you make it

We've done trek 5 as well, and I think it's important to repeat that there
are no easy treks at Philmont, and no one trek is "better" than another;
it's a matter of matching the trek to the needs and abilities of the crew.
Further, the crew can always add side hikes if they want to up the
difficulty level. I've done a few short, end of the season treks, and we
always managed to get in 50+ miles in a 7 or 8 day trek.
