  A couple of the older guys (adults) in my troop have been on the Ouachita trail, it has some good ups and downs, a little more altitude than DFW, and probably a good place to do overnighters. The Cedar Ridge Preserve, near Duncanville (used to be Dallas Nature Center) is a great place for training hikes, lots of ups and downs, and you can easily combine trails to get 5 or 6 tough miles in, no cost, close by. No altitude though. One of the ways we partially solved the altitude problem is by doing lots of aerobics (running, recumbent bike, etc).
