Regarding one-pot cooking:
We have been doing this for the thirty years I have been camping, depending on the meal & the required pace. When we were rushed, we would use MORE pots (since multiple hands can clean faster, etc.) Otherwise, we would one-pot cook, & scrape/rinse it out
between courses. I think we should all treat on-pot cooking as just another tool in the bag of tricks, rather than an edict.

Having had all of the meals twice, and a number three times, I have no
complaints with the dehydrated dinners. Measure the water and follow the
directions EXACTLY, and you should not have any problems. Sometimes we
combined the soup with the main course (which will require reducing the
water from the amount if prepared in two pots), sometimes we didn't, but
  we
always prepared the dessert separately - that is taking one pot way to far
  in my opinion.

Unless you have crew members with special diet requirements, there is no
need to bring your own food.
