First of all, we have a lot of Armadillos in Texas. Second we love
Jalapenos. When you transform a Jap into a Armadillo in the making, it just
doesn't get any better than that.
Enjoy them on New Years. They make too many bowl games more palatable.
Armadillo Eggs
Ingredients
1 can whole jalapenpo peppers
8 oz shredded Monterey Jack cheese
1 box stovetop stuffing mix (I chose pork)
1 cup Bisquick
1 pound pork sausage like Jimmy Dean or Owens
1 pound ground meat
1 cup milk
Itallian bread crumbs
Shake and Bake pork flavored
Using rubber gloves (would I steer you wrong?), split the peppers in half and
remove stem, seeds and veins (the hot parts)
Stuff both sides with cheese and press it back together.
Make meatballs out of sausage, ground meat, 1 cup stuffing mix and 1 cup
Bisquick and 1 cup milk. Mix thoroughly. Mold the meatball around the
peppers by hand.
Mix together 1-1/2 cups of breadcrumbs and 1/2 box Shake and Bake.
Roll the armadillo eggs in the bread mixture, making sure the peppers are
well covered.
Bake on a cookie sheet for 15-20 minutes at 350 degrees F or until brown.
