Scott,
an intermediate training trek might be the 4-C's trail in the Davy Crockett National Forrest
in East Texas. It took us 3 hours from Austin to get there. We did 21 miles in 2 days,
the first day of 14 miles was a bit much for the out-of-shape people (me included)
but it was almost at sea level and flat -- not elevation changes.
The 21 miles was one-way and hence its appeal for me.

The trail is blazed and easy navigation.
We parked one vehicle at the north end Friday night and then hike south to north Saturday and Sunday.
At Philmont we had one of the easier treks but still had a day over 10 miles and we climbed 1,000 feet twice that day so 4-C's is a decent trek.

Cedar Ridge Preserve (formally the Dallas Nature Center) is ideal for day treks of 5-6 miles, more if you double loop. Has some good climbs and drops, about the only thing you miss is the elevation.
The Cross Timbers Trail on Lake Texoma is good for overnights, you can start at either end and get a 4-6 mile hike in for overnights, Water would have to come from the lake, and would have to be treated.
Camp Meisenbach has a few good trails and some good back country camping, Enchanted Rock State Park has some good hiking and backcountry camping, but water would have to be carried.
