If you mean by "messy" that it was every scout for themselves to get as much of the "good food" that they can get, it may point that you need to work on team building activities. High Adventures are Team, not Individual events. We typically try start our first training weekend at the Scout Camp with low COPE activities that get everyone to work together for the common good if we have more than a couple of scouts that are less than a "team centric". If there are only two new high adventure scout, I typically let they will learn by example and positive peer pressure what is expected of a crew member.
Once the scouts realize that it is US and not ME, it becomes easier to get everyone to pull together. On our last Phil Trek, the crew leader basically would ask who hasn't done a chore in a while and the scouts would step up and volunteer to prepare dinner, get the bear bags up, etc. and there were no duty rosters. A few of the scouts were a little slow initially to step up but peer pressure helped remind them that maybe they were not pulling their own weight. When a few had hiking problems on the trail, there was always somebody willing to help relieve them of some of their crew gear to lighten their load for the good of the crew, a few times the crew leader did not even have to get involved.
For our practice hikes, we use large crew bags of homemade jerky, gorp, dried fruit, etc. that are passed around after everyone has washed their hands. The leader typically gives a guideline how much to take initially and everyone adjusts their intake so that everyone gets a fair amount. The big eaters sometimes initially have a problem that they don't get enough to entirely fill there stomachs at lunch but they will get enough calories and food to fill their stomachs at dinner. You can live for a week by not eating though it gets unpleasant by the end of the week as fat and muscle are burned.
