I'll second the Lake Georgetown trail. We did it last spring, coming from
The Woodlands. If you don't mind moving some cars around, you can cut the
length down by using one of the parking lots on the north side of the lake.
In any case, you can hike to the west end of the lake and camp there
overnight.
We also tried to do some "up and down" at the Hill Country State Natural
Area near Bandera. That would be a long trip for you. While that was
probably worthwhile the real problem at Philmont last summer was not the
climbing but rather the altitude. We obviously can't train for that around
here.
Probably the best thing that my son and I did was to climb stairs at the
local high school stadium. We went up and down with full packs for 60
minutes with a 10 minute break three different times. That will definitely
build up your leg muscles. If I get to go again in 2009 I will do a lot
more stair climbing!

Scott, although it's a bit far for you, the Good Water trail around
Lake Georgetown isn't completely out of weekend trip range. Now that
it's completed, you can get a 26 mile, reasonably rugged loop in
there. Many a Philmont crew around here has trained there. There's a
map at http://www.doubleknot.com/openrosters/DocDownload.asp?id=8797
if you like. A bit further, Capitol Area Council's Griffith League
Scout Ranch has around 20 miles of trail on 5000 acres. It isn't
especially hilly but it's a beautiful piece of land. It's just
northeast of Bastrop. See www.bsacac.org for reservations. These are
what we used last year for our trek.
