I don't remember if this was the case when we took the train to Philmont,
but when we took the train from Louisville to Chicago, Amtrak was happy for
us to carry coolers aboard with drinks and snacks. There was room on the
lower level near the restrooms to store them. Given the limited food options
on board, you may want to consider doing this and storing the coolers in
your crew locker at the ranch. (Check to make sure there's enough room in
the crew lockers first.)
