The TREKS book only lists Ranger Training as the Day 2 program for all treks (with exception of looking at the T-Rex track at Anasazi). If your first camp is Vaca you can do Shotgun at Harlan the morning of day 3, but obviously can't hang around until 7PM on day 3 for the Burro Races and still make it to your next camp in daylight.

The other exception in TREKS is "Tour Rayado" for itineraries that have Olympia for their starting camp. Obviously, crews do that as soon as they get off the bus.
In 2001, on Trek 21, my crew hiked back to Ponil from Sioux the night of Day 2 to go to the Cantina. (By the way, we had an afternoon bus, but our Ranger did most of his Training in Base Camp and saw that the crew knew what they were doing in camp, so time was not an issue.) It was July 3 and turned out "the talent" was in town for the rodeo, so it was just a quick root beer, a couple games of horseshoes, and a return to camp.
And I'm sure some crews with starting camps near Abreu hit the Cantina there on Day 2. Of course, Cantina visits are a lot bigger thing say Day 9...
