We use an 8qt pot (available from the Scout catalog and elsewhere) with
roasting bags big enough to hold a whole turkey (minus the legs, head
and feathers). We pour a little water to the bottom of the pot, and we
do not use a grate. Roasting bags are designed to withstand heat and
we've not had problems with them melting or bursting.
