Hello All-

Since it's posted on the Food Network web site I guess the proportions of
essence aren't secret:

Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Same as in his cookbooks.

But- I was putting together spices for my troops trek this evening and found
2.8 oz pre made Essence bottles at 2 for $5.

I can't make it from scratch for that!!!!!!!!!!!!

By the way, as a former employee of the most well know North American film
manufacturer, I don't put food in film canisters. There are very bad
volatile chemicals in photographic film that contaminate the canisters.

It isn't worth the risk when you can buy a fresh poly container that was
meant for food for 40 cents.

Great! For those interested - here is the direct quote from Backpacker
Magazine - with due credit for the reference:

The above represents the direct quote from the magazine, as with most chefs,
Emeril does not give the exact proportions. However, I'd take the article
literally - a pinch of each ingredient...... As I said, I'm headed for
Philmont in two weeks. I'm mixing a batch of the stuff. With a sprinkling of
Essence, and a loud "Bam!", we should be able to kick it up a notch.
