I took a small "cardboard tube" type jar of New Orleans style spices
(forget the name). We used it on just about everything except the chili
mac and the three bean chili. Some of the crew used it on those, but I
think they were just trying to show they were "men" when it came to spicy
food.
On the whole, I thought the dinners were very good, except for the mac and
cheese and the "Tooth of Time" chicken. The only thing I thought really
needed the extra spices was the spaghetti (first night for us) and the mac
and cheese to make it palatable.

Ok I've seen two different opinions about the meals, what IS the
majority of dinners, backpackers pantry, Alpine or whatever??????
I'd go with a 4 ounce bottle of Tabasco or Tabasco habenero sauce
and
or spice wheel based on my past unless someone can contribute something
other
than what they feel is spicy enough.
Extra weight, yea, eating flavorful food counts towards my comfort
zone in backpacking.
