sidenote:

This method basically uses the double boiler cooking concept. By
placing the bag in the pot the hot water & steam cooks the food.
Eliminates food from being burned or scotched to the bottom of the
pot. I am in the food service business and this method of cooking
in bags is now a common process. Many operations now use a
process of cook & chill where they prepare large batches of food ,
package it in plastic bags, freeze it, then ship to restaurants where
they basically bring the product up to the right temperature either
using a steamer or putting the bags in kettles of boiling water.

I was recently in a food plant in Texas where they were packaging
several products for different national restaurant chains. This allows
these restaurant chains to have consistent products in all their
restaurants. I would imagine that the vast majority of the listserver
would be surprised how many of their favoriate restaurants use this
process. ( now you know how the real story of how that macaroni &
cheese taste and looks the same at every restaurant in the same
national chain )
