Anyone with special diet needs needs to contact Philmont to request and review the current trail menu (when it is issued - April or May? - prior year versions are posted on the web) to see what they will need to do to supplement / replace items. Philmont DOES NOT have special menus.
The procedure for packaging the meals is spelled out in the Guidebook to Adventure (TREKS? both?), which basically is working with Logistics to get the special meals to the right commissary for you to pick up with the regular crew food pickup.
Which means that you also need to know the code for what meals you get what day. And to answer that question, the meal number is the same as the last digit in the date through July 31, then one higher than the last digit in August (Meal 2 on August 1, etc.)
