My son has a dairy allergy and provided much of his own food last summer.
The process of giving it to Logistics and picking it up at the commissary
stops along with the regular crew food worked without a hitch. He carried
his own pot and alcohol stove and that also worked well. Some of his meals
ended up being more popular with the rest of the crew than the
Philmont-provided ones (he was in a hot-n-spicy phase at the time).

I had a vegetarian Scout on my 95 trek. Philmont will arrange special
meals upon request, that can be picked up at the commissary stops. I
have also heard that some V-Scouts I-camped themselves their food
packages upon arrival at Basecamp, but that is risky due to the
inconsistent nature of deliveries. So the Scout may need to carry some
supplemental food and cooking gear himself. The backcountry staff was
very supportive of our V-Scout, and gave him various items along the way.
Make sure the Ranch is kept well informed, and that all arrangements are
hammered out well in advance, and confirmed.
