It really depends on how busy the individual camp is at the time you show up. I have seen multiple unscheduled crews show up for mine tours and other popular programs. Most camps will however will develop or quickly make up a program dependent on the time a crew or the staff has available. Just remember to ask nicely and be flexible, sometimes the staff can only do little quickie tours or so.

Most of the program opportunities are listed in the itineraries. I know that in past years the challenge camps had shorter courses for pass through groups. The favorite pass through program that I experienced was a tour of the new Cypher's Mine Cabin including the shower and hot drinks for the crew.
