There are several ways to prepare PhilMeals. The Ranger will instruct you
on how to do it in the pots, requiring pot cleanup afterwards. Basically,
you put the food in the pot and add the boiling water, stir well and wait a
while. The quantity of water depends on the meal, but it is clearly labeled
on the food. Always prepare it "scant" and then add more water later if
needed. When you make the meal, many will have a veggie or something in a
second bag, we usually (with the possible exception of mashed potatoes) mix
the second bag with the first. However, don't mix the dessert with it,
that's probably not as good.
My crews use a large turkey roast-in bag. We line a pot with the bag, and
put the food, and then the water, into that bag, mixing well. You have to
be a little careful not to tear the bag. While you have to carry some 20
bags or so, combined I doubt they weight more than 8 oz. By using the
turkey bag, you avoid having to clean the pot and you have your own,
built-in, yum-yum bag.
I am a little concerned: you should practice this before you go to Philmont.

suggest ordering one days worth (about $100) and practicing at one of your
last hikes.
You might also look into Coop Wright's "Philmont Advisors' Guide." It is
comprehensive and tells you everything you need to know.

Does anyone know the method for preparing dehydrated Philmont meals? Being
dehydrated, do you simple boil water and pour it into the bag with the food
for a few minutes while it to rehydrates? Any idea how much water a given
dehydrated Philmont meal would take?
Any idea what the average weight of a given day of Philmont food would be?
