Pardonez-moi, s'il vous plait. I assumed (perhaps incorrectly) that the questioner had found andouille or chorizo either unavailable or unsuitable.
The dried chinese sausage will not spoil and needs no refrigeration. It makes an interesting chinese lunch dish by simply cutting it up and dropping it in the water you are using to prepare your Carolina or Uncle Ben's rice. Rice and sausage. Seems too simple. But good.
