I tend to be a recipe cook, with a large library of cookbooks. I adapt the recipes found therein to the requirements of the particular camping trip.
Jambalaya is sort of a generic term, often composed of whatever is on hand. A quick trip through my cookbooks (literally a couple of minutes) reveals 2 recipes in Emeril's Louisiana Real and Rustic at pp. 220-222, one in Every Day's a Party, by the same author, at p. 64, one in The Joy of Cooking at p. 64, one in The Frugal Gourmet Cooks American (with an Eagle Scout in the cover photo) at p. 228, and the definitive Cook's Illustrated (from America's Test Kitchen) May/June 2002 issue at p. 10-11.
I'm sure there are many, many more. A few minutes' more looking would probably unearth a few more variations.
