Our approach was similar but we used just 1 pot. We lined the pot with the turkey bag and boiled the water in it directly. When boiling, we poured in the food and stirred til done. We also poured a couple cups of water in the bottom of the pot before putting the turkey bag in. This provided for enough clean water to wash dishes after the meal.
 
One caution. As you stir the food as it is reconstituting, be careful to not cut a hole in the bag. We had one case where we put a small hole in the bottom of the bag causing it to split wide open and we ended up with a meal with an extra cups of water in it (it still tasted good)
