Jim,
We took three crews last year and two used billy pots (4 qt and 6 qt so they nested nicely) and one used a large coffee pot (3rd trek for the lead Advisor using coffee pot). The coffee pot worked real well for them for all their needs. Very easy to pour from so not having to use a cup or spoon to dish hot water. In fact during their four shakedowns they used the coffee pot exclusively and never had any problems. One concern I had with a coffee pot was if the pot became damaged during the trip and needed repairing (spout broke off or damaged) it would be bad as no real backup. Again as shared was not a problem for them. You will need to work with your Ranger on taking a coffee pot vs billy pot.

Evening all,
As I peruse the Philmont food menu it occurred to me that bringing a 20 cup coffee pot with lid would suffice nicely to provide hot water to reconstitute the meals. Boil the water in the coffee pot and then easily pour it into bags to reconstitute it. I have a 10 man crew, most of the meals call for 2 cups of water per serving bag.
Then the other pot can be used for dish water.
Then I can pack spice jars inside of the pot during hiking.
Anyone bring coffee pot to use for food prep water?
Jim Z
