Any Italian grandma knows to use a device under the sauce pot to spread the heat and keep the gravy from scorching. Some are thick and heavy, others layered and perforated. Some have handles, even folding handles. Great for taking a whisperlite down to a simmer. They're called "flame tamers" and are sold in cookware or gourmet shops.
