Any Italian grandma knows to use a device under the sauce pot to spread the heat and keep the gravy from scorching. Some are thick and heavy, others layered and perforated. Some have handles, even folding handles. Great for taking a whisperlite down to a simmer. They're called "flame tamers" and are sold in cookware or gourmet shops.

Italian Gramas use flame tamers. Lemme tell you what Cajuns use. Pipeline slip blind flanges, preferable of stainless steel. you want one about 6" in dia. They come with a "handle" on them so you can see it is in the bolt flange of a pipeline. Tha's for regular size stoves.
For backpack stoves like Whisperlites and SVEA 123's I use a laboratory flame spreader. It's a 6" square of stainless steel mesh with what used to be asbestos impregnated in it but now comes with ceramis. IT's light and spreads the heat evenly.
Abvailable at laboratory supply houses or from your nearby BSA friendly laboratory for free.
