Steve, your question is a little outside my area of knowledge. I know that the Logistics department does keep track of those kinds of things, at least informally. Just anecdotally, though, it seems as though the higher itinerary numbers are chosen just as often as the lower numbers. I believe there can be two crews starting each day on any one of the approximately 30 itineraries, and there are about 30 crews arriving on an average day. So, most of the itineraries must be "taken" every day. Probably others here will have more info.

It doesn't work out quite that way.
Of course, there are 35 available routes. And while 30 crews arriving per day is about average, the number any given day varies considerably, from about 25 to 35.
As the most popular treks are taken twice (or more, go figure) each day (not to mention that even the less popular treks often have two crews any given day), there are are always treks every day with no crews starting them.
In fact, the least popular are only taken only a few times the whole summer - the skew of the data from "on average" is tremendous.
And popularity is only slightly related to challenge - the Super Strenuous routes are on the lower side, but the most popular, year in and year out, are a couple of Strenuous routes.
